Icebox Pecan Cookies

These cookies are a great make ahead cookie. With a hint of cinnamon, and the crunch of the pecans, this cookie is sure to be a hit with your family.

Ingredients:

1 1/2 cups butter

1 cup packed light brown sugar

1/2 cup granulated sugar

3 eggs

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons cinnamon

4 cups all-purpose flour ( sifted )

1 cups chopped pecans

Directions:

In a large bowl, sift flour, baking soda, salt and cinnamon, then set aside. In a large mixing bowl, cream butter, brown sugar and granulated sugar until light and fluffy. Add eggs, 1 at a time, mixing well after each one. Add flour mixture to butter mixture, combine until just moistened. Fold in pecans, shape into a log, and wrap in plastic wrap. Refrigerate for about 2 hours or until chilled. Place sliced cookies onto greased cookie sheet about 2 inches apart. Bake at 400 degrees F. for 5 to 8 minutes or until golden brown. Place on a wire rack and cool.
